I sell what is known here as raw honey. The stuff in the supermarkets is cut with corn syrup to prevent crystallization which is natural but some look at it as spoilage, honey has oxidants that prevents same. Honey harvest is labor extensive and requires a lot of equipment. The price you pay is right.
Just the other day I put a jar of honey into a pot of hot water to melt the crystals and make it pourable.

I cringe when I go to a county fair or farmer's market and see 1. people selling pint size jars of honey for $25 and 2. people sell squeeze bottles of honey (the same ones you can find in grocery stores) and claiming that it is "Local".
