I think it depends on the pipe. Most of my pipes are fine to remove stem when warm, but I have one that is extremely tight even when cold. I don’t even try until that one has cooled.
I too concur with this assessment. Depends on the tenon/mortise fitment. As a general rule most experienced pipers recommend waiting for it to cool down. YMMV

I cracked the mortise on a pipe once taking it down while still warm. I did sort of repair it but it does look like it's opening up again. Fortunately I learned my lesson on a cheap pipe.
